Read the story

Purple Caturra from Rodrigo Sánchez's Finca Monteblanco, co-fermented with a culture that has spent eight days feeding on strawberries. It tastes like the sweet shop: strawberry hard candy first, a creamy, white-chocolate middle, and ripe berries as it cools. Loud, joyful, and unmistakably fermented.

Monteblanco sits at about 1,730 metres in La Tocora, a vereda of San Adolfo in southern Huila, close to the Cueva de los Guácharos National Park and the Suaza River. Cool nights and steep slopes slow the cherries down, so they ripen with more sugar — exactly what a long fermentation needs.

The hands

Grown by Rodrigo Sánchez Valencia at Finca Monteblanco.

Rodrigo is the third generation on Monteblanco, a 14-hectare family farm his grandfather started near Cueva de los Guácharos National Park and the Suaza River. He grows Purple Caturra, Pink Bourbon, Geisha and Pacamara, won the Yara Champion programme with Pink Bourbon, and since 2016 has built a winemaking-inspired way of fermenting coffee with cultures grown from the farm's own microbes.

First, Rodrigo grows a “mother culture” from the yeasts and bacteria already living on the farm. He feeds it panela and concentrated strawberry juice until it reaches the right sugar and acidity. Ripe, high-sugar cherries are floated, pulped, and the seeds rest with that culture in a sealed tank for about 150 hours while he checks Brix and pH constantly. Then the coffee is washed and dried slowly — a few days in sun, then about two weeks in shade — so the fruit character settles into the seed.

The cup

Open the bag and it smells like a sweet shop. The first sip is strawberry hard candy, then a soft, creamy sweetness like white chocolate, and a mix of red and dark berries as it cools. This is a big, funky cup — brew it a little coarser if it shouts.
